This zesty homemade Italian dressing recipe is full of flavor and so easy to have ready in your refrigerator all Summer long!
Making this homemade Italian dressing is incredibly simple. The flavor is zesty and bright, full of garlic, wine vinegar, and balanced with a touch of sweetener. Then of course it’s mixed together with extra virgin olive oil to form a creamy emulsion.
It’s also got a touch of Dijon mustard added in to give a little more zing. Feel free to throw in some dried or fresh herbs if you have them on hand. It’s hard to ruin this recipe!
Here’s a list of additions that go well in a Zesty Italian Vinaigrette:
- Chervel
- Lemon zest
- Basil
- Oregano
- Thyme
- Tarragon
- Lemon Balm
- Minced shallots
- Chives
NAN’S TIP: Adding Dijon mustard to a salad dressing aids in the thickening or “emulsion” of the vinaigrette.

Zesty Italian Vinaigrette
Zesty and full of Italian flavors, this dressing is great on salads, but makes a fabulous marinade for poultry too!
Ingredients
- 2 Tbsp. white or red wine vinegar
- 2 tsp. Dijon mustard
- 1 tsp. honey
- 1 tsp. minced garlic or 1/2 tsp. garlic powder
- 1/2 tsp. each dried oregano, dried thyme, and dried basil
- 1/2 tsp. tarragon (optional)
- 1/2 tsp. kosher salt
- 1/4 tsp. fresh ground pepper
- 6 Tbsp. extra virgin olive oil
Instructions
- Combine all ingredients in a small bowl and whisk until full emulsified. Store in refrigerator for up to 14 days.
