NOW, LET’S MAKE SOME VALENTINE’S DAY FANCY CANDY HEARTS, SHALL WE?
First, choose your candy heart mold –
The first thing you’ll need is a silicone heart mold. I ordered one from Amazon, but picked up the smaller size heart mold at Wal-Mart. They can easily be found in local craft stores too. The yield of this recipe will vary according to the size of heart mold you choose.
If you want lots of small hearts, great! You can package up half-a-dozen for each person. But if you’re looking for a more substantial sized candy for giving, choose a larger one. Whatever size you choose, they’ll be beautiful and delicious when you’re through!
Next, choose your candy decorations –
You’ll want to select a nice variety of small Valentine’s Day colored candies, sprinkles, candy pearls, etc. You can find an amazing array to choose from everywhere you look this time of year. I found some very cool sprinkles that had gold arrows and hearts. I chose 6-7 different candies and sprinkles that included:
- Valentine’s colored M&M’s
- Cinnamon hearts
- White and Pink “pearls”
- Assorted sprinkles in red/light pink/white/dark pink
- Red & white hearts
Your designs can be as simple or elaborate as you wish. Those of you who have an artist struggling to get out, can get a little nutsy playing with all those sprinkles! Get creative and show your sweetheart some love!
THE BEST WAYS TO MELT CHOCOLATE FOR VALENTINE’S DAY FANCY CANDY HEARTS
- MICROWAVE METHOD: Place chocolate in a microwave safe glass bowl. Heat on high for 30 seconds. Stir and repeat in 15 second intervals, stirring between, until 3/4 melted. Remove from microwave and continue to stir until completely melted and smooth.
- DOUBLE-BOILER METHOD: Place chocolate in a small dry glass bowl. Add several inches of water to a saucepan the right size to hold the glass bowl without touching the water. Place the saucepan over low heat and put the chocolate filled bowl on top. (make sure it’s not touching the water) Continue heating the chocolate, stirring as needed until chocolate is smooth.
PSST! I’VE GOT THE SECRET TO MAKING PERFECT VALENTINE’S DAY FANCY CANDY HEARTS
What kind of secret can she possibly have that I don’t know about, you ask? Well, until a few years ago, it was a secret to me too!
Your Valentine’s Day Fancy Candy Hearts will be perfect… with this secret weapon!
If you want chocolates that are shiny and have a beautiful smooth surface, then you need to use a tiny bit of COCONUT OIL.
YES! You heard me right! Coconut oil is the secret that home kitchen candy makers keep to themselves.
A few years back I broke into the inner-sanctum of a local group of gals who take their candy making very seriously. They taught me all kinds of “tricks-of-the-trade” that I would have never found out otherwise.
You see, most of these older women learned their skills from years of experimenting and “playing around” as they called it. They also have deep-seated notions and opinions that they do not tend to keep to themselves. It made for a rousing exchange throughout my time with these fabulous candy-makers.
I have a deep respect for this gaggle of gals who are so adept with all kinds of sugar-crafting. I spent the entire day mesmerized and enthralled with both their skill level and creativity.
HOW TO USE COCONUT OIL IN YOUR MELTED CHOCOLATE
When adding the coconut oil to your melted chocolate, you’ll need to be slow and deliberate. Add the coconut oil in one teaspoon increments, testing for “slippage” after each addition.
The white chocolate may require 3-4 full teaspoons to be the right consistency. White chocolate has a much dryer consistency when melted, so it tends to need more coconut oil than dark or semi-sweet chocolate.
It’s just a matter of “slippage” and “sheen” as my candy making friends say. You’ll see the consistency is correct when it cleanly slides from the back of a spoon. It will also have a shiny and smooth surface appearance.
NAN’S TIPS FOR MAKING PERFECT FANCY CANDY HEARTS
- Place your silicone molds on rimmed baking sheet for ease of transport
- I like to use a 4 cup measuring cup to melt my chocolate in the microwave; it makes the chocolate easy to pour into the large heart mold sections.
- Melt the chocolate only 3/4 of the way in the microwave. The residual heat from the glass bowl/measure cup will finish melting the chocolate while you’re stirring
- Using a small baby spoon makes filling the small heart molds much easier
- If you put candies around the edges, start filling in your melted chocolate around the sides and work toward the center. This will “anchor” your design so it won’t get too distorted.
- When placing a candy in the center, you’ll want to start spooning the chocolate into the center first and then move outward. (same reasoning applies here)
- Don’t “PUSH” the chocolate around the bottom of the mold, let it “FLOW” freely into the cracks and spaces
- Make sure the bottom’s entire surface area is covered for best design results
- Gently “jiggle” the mold after filling to help level the chocolate
VARIATIONS ON A THEME – Get creative and just experiment!
When I was getting towards the end of my supply of prepared melted chocolate, I started to experiment. I did some with white and pink chocolate layers. For a few, I poured sprinkles right into the chocolate to give a “confetti” effect. When I ended up with more white chocolate remaining, a few solid white hearts were born.
Obviously, the only limit to the number of variations you can make is your creatively and patience! When making elaborate designs, it can take a bit more time and effort. But, as you can see, it was worth it! Wait till H.H. sees his Valentine’s Day gift this year!
