These delicious bruschetta-style toasts are a perfect addition to a Spanish Tapas-style meal, any time of year.

Preheat oven to 350°F. Place bread slices on rimmed baking sheet and toast for 8-10 minutes in preheated oven. While still warm, rub the cut garlic clove over surface of one side of all the toasts. Let cool. (If preparing ahead of time, store in an airtight tin or container until ready to assemble.)
Prepare garlic gorgonzola cheese spread, slice tomatoes, roasted red peppers and olives.
Spread garlic-gorgonzola cheese on toasts and top with slices of Bresaola/Dry cured beef. Garnish with diced green onions if desired.
Combine all ingredients except oil oil in a small bowl. Drizzle with olive oil and stir to combine. Top garlic toasts with mixture and serve immediately.
Spread pesto on garlic toast and top with mozzarella pearls, grape tomato halves and drizzle with balsamic vinegar reduction if desired.
