TAPAS GARLIC TOASTS WITH ASSORTED TOPPINGS

My Tapas Garlic Toasts with Assorted Toppings is a tasty combination of vegetables, cheeses and Mediterranean spices that will please everyone’s taste buds! 

These delicious bruschetta-style toasts are a perfect addition to a Spanish Tapas-style meal, any time of year.

 

FABULOUS TAPAS TOPPING IDEAS

Here’s my three different topping suggestions that should really help you “channel” your inner-Spaniard!

  • DRIED BEEF WITH GARLIC & GORGONZOLA – I used a lovely thinly sliced Bresaola dried beef to top my favorite savory spread.  Garnished with long sliced chives, it’s a really delicious combination that’s a fab appetizer any time of the year. 

 

  • MEDITERRANEAN VEGIES & MANCHEGO – Tossed in good quality Spanish olive oil, kosher salt and freshly ground pepper, this combo is killer!  Sliced roasted red peppers, olives, fresh parsley and Manchego cheese are combined into a vegetable relish that’s just plain out of this world.  If you can’t find Manchego, try to find a nicely spiced cheese to give this mixture it’s characteristic flavor.

 

  • PESTO CAPRESE – This one is sooo easy, and is just a matter of combining prepared ingredients into a fast and tasty bruschetta.  Find some good quality jarred basil pesto, a package of those adorable fresh mozzarella “pearls”, a few assorted colors of grape tomatoes, and you’re golden!

Tapas Garlic Toasts with Assorted Toppings

A tasty combination of garlic toasts with Mediterranean toppings that will please everyone's taste buds! These delicious topped-toasts are a perfect addition to a Spanish Tapas-style meal.

Ingredients

  • DRIED BEEF & GARLIC GORGONZOLA
  • 8 oz. cream cheese, softened
  • 4 oz. gorgonzola or blue cheese, crumbled
  • 1 Tbsp. garlic, minced
  • 1 Tbsp. olive oil
  • 1/2 tsp. freshly ground black pepper
  • Bresaola or other good quality Spanish dried beef slices
  • Green onions, diced for garnish (optional)
  • MEDITERRANEAN VEGETABLE & MANCHEGO
  • Manchego cheese crumbles
  • Roasted red peppers, thinly sliced and drained
  • Assorted olives, sliced
  • Fresh Italian parsley, chopped
  • Kosher salt & freshly ground black pepper
  • Spanish olive oil
  • PESTO CAPRESE
  • Jarred Basil Pesto spread
  • Assorted colored grape tomatoes
  • Mozzarella cheese pearls
  • Balsamic Reduction Drizzle (see related post)
  • Half Loaf of French bread, sliced on the bias
  • Garlic clove, peeled and cut in half lengthwise

Instructions

GARLIC TOASTS

Preheat oven to 350°F. Place bread slices on rimmed baking sheet and toast for 8-10 minutes in preheated oven. While still warm, rub the cut garlic clove over surface of one side of all the toasts. Let cool. (If preparing ahead of time, store in an airtight tin or container until ready to assemble.)

Prepare garlic gorgonzola cheese spread, slice tomatoes, roasted red peppers and olives.

DRIED BEEF & GARLIC GORGONZOLA

Spread garlic-gorgonzola cheese on toasts and top with slices of Bresaola/Dry cured beef. Garnish with diced green onions if desired.

MEDITERRANEAN VEGETABLE & MANCHEGO

Combine all ingredients except oil oil in a small bowl. Drizzle with olive oil and stir to combine. Top garlic toasts with mixture and serve immediately.

PESTO CAPRESE

Spread pesto on garlic toast and top with mozzarella pearls, grape tomato halves and drizzle with balsamic vinegar reduction if desired.
