SWEET RICOTTA AND FRESH FIG APPETIZER

Sweet Ricotta & Fresh Fig Appetizer is perfect in both the Spring and Fall when fresh figs are ripe and plentiful.

Drizzled with honey and a few grinds of fresh black pepper, whipped ricotta makes a delightful base for this deliciously different fruity appetizer.

Beautifully layered fresh figs are given an additional drizzle of honey before adding cubes of savory gorgonzola cheese and a final flourish of crispy fried sage leaves.

Seemingly a simple combination of fresh and seasonal ingredients come together to form an appetizer that’s got real  panache. 

When served up with a selection of flatbread, toasts and crackers, the only thing left you’ll require is a nice crisp white wine.

I love the sophisticated pairing of a savory gorgonzola with sweet fresh figs and honey. Adding a final savory component by sprinkling the platter with crumbled fried sage leaves should not be skipped.  

All the ingredients come together in a way that complements each other, so don’t think that frying up some fresh sage is too much trouble, please!

It takes but a few moments of your time, some paper towels and can be done up to a few hours before you want to serve.  You’ll crumble the fried sage over your platter and garnish with whole fried or fresh sage leaves.

 

FRIED SAGE LEAVES – Quick and Simple

Frying fresh sage leaves is a fast process, very fast once the oil is heated to the proper temperature. 

Make sure you assemble everything you’ll need before starting to help the process run smoothly.  

  • I used a medium skillet that was large enough to fry 3 large sage leaves at a time without touching. 
  • Once the oil is hot and glistening, place the sage leaves into the oil.
  • Watch for when the edges begin to curl and darken, then turn over with a set of tongs.
  • Cook for another minute or so, but don’t let the sage get too brown around the edges.
  • Remove from oil and drain on paper towels.
  • Let sit at room temperature until ready to serve appetizer.

 

ASSEMBLING YOUR FRESH FIG APPETIZER

Even though ricotta cheese is already smooth, I find that it doesn’t have the right consistency for spreading without whipping it first.  I just give it a good whip in a small bowl with a hand-whisk and it’s ready to go.

Pick out your platter or large plate to spread out the ricotta in a nice even layer, about 1/2 inch thick. Drizzle honey over the top and then add 4-5 grinds of fresh black pepper.

Then it’s time to artistically arrange the fresh fig halves on the ricotta, starting in the middle and working outward. Give the figs an additional drizzle of honey and top with gorgonzola cubes.

Lastly, crumble the fried sage leaves over the entire platter and garnish with more sage before serving.

That’s all there is to it, so fast and simple to pull together, but with such spectacular results!  You’ll find the printable recipe card at the bottom of this post.

Sweet Ricotta & Fresh Fig Appetizer

Sweet Ricotta & Fresh Fig Appetizer is perfect in both the Spring and Fall when fresh figs are ripe and plentiful. Drizzled with honey and a few grinds of fresh black pepper, whipped ricotta makes a delightful base for sweet fresh figs, cubes of savory gorgonzola cheese and a final flourish of crispy fried sage leaves.

Ingredients

  • 8 oz. ricotta cheese (whole or skim)
  • 4 Tbsp. honey, divided
  • 1/2 tsp. freshly ground black pepper
  • 12-14 large fresh figs, washed and dried
  • 4 oz. gorgonzola cheese, cubed or crumbled
  • 8 large fresh sage leaves
  • 1/3 - 1/2 cup canola oil
  • Crunchy crackers, toasts or breadsticks

Instructions

    1. Place ricotta cheese in a small bowl and whip with a fork or a hand mixer until creamy.
    2. Spread whipped ricotta on your selected platter/dish in a layer about 1/2 inch thick.
    3. Drizzle 2 Tbsp. honey over ricotta cheese.
    4. Grind black pepper over cheese and honey in a generous layer. about 1/2 a teaspoon in total.
    5. Cut figs in half and lay in an attractive pattern on top of cheese and honey mixture.
    6. Drizzle remaining 2 Tbsp. honey over figs.
    7. Sprinkle gorgonzola cheese over top of figs and cheese. Cover with plastic wrap and place in refrigerator to chill until ready to serve.
    8. Place several layers of paper towels on counter. Place oil in a small nonstick skillet over medium-low heat. When oil is hot, add several sage leaves to pan. After a few seconds the edges will begin to curl. Using tongs, turn sage over and let it cook for about 45-60 seconds, or until crisp, but not browned.
    9. Remove from oil and place on paper towels to drain and cool. Repeat with remaining sage leaves.
    10. When ready to serve, remove plastic wrap and crumble fried sage leaves over top entire platter.
    11. Serve with crackers, toasts or breadsticks.

Notes

Can be kept covered in refrigerator for up to 4 hours before serving.
