Sweet Ricotta & Fresh Fig Appetizer is perfect in both the Spring and Fall when fresh figs are ripe and plentiful.
Drizzled with honey and a few grinds of fresh black pepper, whipped ricotta makes a delightful base for this deliciously different fruity appetizer.
Beautifully layered fresh figs are given an additional drizzle of honey before adding cubes of savory gorgonzola cheese and a final flourish of crispy fried sage leaves.
Seemingly a simple combination of fresh and seasonal ingredients come together to form an appetizer that’s got real panache.
When served up with a selection of flatbread, toasts and crackers, the only thing left you’ll require is a nice crisp white wine.
I love the sophisticated pairing of a savory gorgonzola with sweet fresh figs and honey. Adding a final savory component by sprinkling the platter with crumbled fried sage leaves should not be skipped.
All the ingredients come together in a way that complements each other, so don’t think that frying up some fresh sage is too much trouble, please!
It takes but a few moments of your time, some paper towels and can be done up to a few hours before you want to serve. You’ll crumble the fried sage over your platter and garnish with whole fried or fresh sage leaves.
Frying fresh sage leaves is a fast process, very fast once the oil is heated to the proper temperature.
Make sure you assemble everything you’ll need before starting to help the process run smoothly.
Even though ricotta cheese is already smooth, I find that it doesn’t have the right consistency for spreading without whipping it first. I just give it a good whip in a small bowl with a hand-whisk and it’s ready to go.
Pick out your platter or large plate to spread out the ricotta in a nice even layer, about 1/2 inch thick. Drizzle honey over the top and then add 4-5 grinds of fresh black pepper.
Then it’s time to artistically arrange the fresh fig halves on the ricotta, starting in the middle and working outward. Give the figs an additional drizzle of honey and top with gorgonzola cubes.
Lastly, crumble the fried sage leaves over the entire platter and garnish with more sage before serving.
