SPANISH CHORIZO & SHALLOTS IN RED WINE

Spicy Spanish chorizo becomes intensely flavored when cooked and steeped a bold red wine and sweet shallots.  Speared with toothpicks, Spanish Chorizo & Shallots in Red Wine is a fabulous tapas dish when served with crusty French bread.

This dish needs to be started at least the day before.  The great part is it can be made up to 2 days before serving.

The chorizo only requires a fast reheating, and the final flambé treatment with a fabulous Spanish sherry.  If you’re making my entire “Romantic Tapas for Two” menu, you’ll use it again in the Spanish Patatas Bravas. Why buy a whole bottle and not use it twice?  

This is one of those incredibly simple dishes that is truly more than the sum of its parts!  Do Not Skip This Recipe!

Spanish Chorizo & Shallots in Red Wine

Yield: 6 for Tapas Meal
Prep Time: 10 minutes
Cook Time: 20 minutes
Additional Time: 8 hours
Total Time: 8 hours 30 minutes

Spicy Spanish chorizo becomes intensely flavored when cooked and steeped a bold red wine and sweet sauteed shallots. Speared with toothpicks, it's a fabulous Tapas dish when served with crusty French bread.

Ingredients

  • 8 oz. Spanish chorizo, cut crosswise into 4 pieces
  • ¾ cup Spanish red wine or Chianti
  • ½ cup shallots, peeled and finely diced
  • 2 Tbsp. Spanish sherry
  • 1/3 cup fresh Italian parsley, chopped

Instructions

  1. Place the chorizo pieces and red wine in a small pot, cover and place over medium-low heat.  Cook for 20 minutes, stirring once, half way through. Uncover, let cool, recover and hold in pot at least 8 hours, or overnight if desired.
  2. Remove chorizo chunks from the pot and discard the wine.  Cut meat into slices and place in a medium skillet over medium-high heat.
  3. Once the chorizo begins to render fat, add diced shallots and stir well to combine.  Continue cooking and stirring for 3 minutes, or until shallots have softened and chorizo is sizzling.
  4. Remove pan from heat, add sherry, ignite with a match and shake pan until flame dies out.  Sprinkle with parsley and serve immediately with crusty bread and toothpicks.
