SMOKED TROUT AND SAVORY CREAM CHEESE APPETIZERS

This is one of the fabulous recipes I’m serving at my French-Themed Mother’s Day Luncheon this year.  Presenting  the Smoked Trout and Savory Cream Cheese Appetizers inside Choux Pastry Puffs makes them special enough for party fare.

They’re garnished with thinly sliced European cucumber and sprigs of fresh dill.  Don’t they look spectacular set upon this pink toile cake stand?  I’ll tell you a little more about this festive Mother’s Day celebration later in this post.

 

SO SIMPLE TO MAKE, SO SOPHISTICATED TO SERVE

With some simple ingredients that come together in minutes, these Smoked Trout and Savory Cream Cheese Appetizers taste amazing.

When you combine cream cheese with savory and fresh ingredients like lemon, red onion, fresh herbs and capers, it’s a winning combination.  

Since this isn’t a “spread” per se, I don’t mix the chunks of smoked trout into the savory cream cheese mixture.  Rather, depending on the presentation, I like to crown each appetizer with bite-sized hunks of the smoked fish.

As you see in the choux puff stuffed appetizers above, I did the same thing, making each puff look incredibly appetizing.

This is such a versatile recipe that can be served with an array of crunchables, not just crackers.  How about serving these on top of toasted bagels for brunch? 

Or as I’m using it inside crispy choux puffs for a fancy “sandwich” filling.  Speaking of sandwiches, what about elegant little tea sandwiches stuffed with this fabulous filling?  You can see the possibilities when you start brainstorming!

MOTHER’S DAY LUNCHEON CELEBRATION  – A “French-Themed” Ladies Lunch

Celebrating Mother’s Day this year will be festive and delightfully delicious when hosting a “French-Themed” lunch to honor the mothers in your life.

But what about dessert? You can’t have a bunch of gals together without serving dessert, right?

 

MOTHER’S DAY LUNCHEON – Desserts Are Mandatory!

Here’s the two desserts I chose to be the “sweet endings” to my fabulous Mother’s Day Luncheon.  I’ll serve both with an assortment of teas to wind down what is sure to be a lovely afternoon.

The first is a light and moist Pink Grapefruit Chiffon Cake with White Chocolate Buttercream Frosting.  Yes, I know it’s PINK!

I finished the cake off with some delightful sugar flowers and leaves I purchased on Amazon last year.  They lastchocolate grand marnier pots de creme forever if kept in a dry, dark and cool location. 

It turned out so lovely with three luscious layers, just aching for some White Chocolate Buttercream Frosting.  Depending on the size of cake pan you use, you’ll have 2 or 3 layers, so you will need 6 whole cups of frosting for this cake.  (that’s exactly how much my recipe makes!)

Now, for the second Mother’s Day Luncheon dessert, I knew any gaggle of women would be looking around, waiting for the chocolate to appear!  So as not to disappoint, I’ve also included a lovely Chocolate Grand Marnier Pots de Crème on the menu.  

It’s densely chocolate, with a hint of citrus that gives it a new level of sophistication.  In keeping with the party’s pink color-scheme, and the pink grapefruit cake, I garnished them with Candied Pink Grapefruit slices.  They are amazingly addictive, so be careful to save enough for your presentation!

I finished the Chocolate Grand Marnier Pots de Crème with a dollop of sweetened whipped cream and fresh mint.  Don’t they look lovely? And they taste even better!

Smoked Trout & Savory Cream Cheese Appetizers

Savory cream cheese laced with capers, lemon and onion is crowned with hunks of rich smoked trout to combine for a fabulously sophisticated appetizer.

Ingredients

  • 8 oz. cream cheese, softened
  • ½ cup red onion, finely diced
  • 1 Tbsp. EACH fresh chives, tarragon and dill, minced
  • 1 Tbsp. capers, chopped
  • 1 Tbsp. lemon juice
  • 1 tsp. lemon zest
  • 1 tsp. kosher salt
  • ½ tsp. fresh ground black pepper
  • 8 oz. smoked trout, broken into bite-size pieces
  • Garnishes: Thinly sliced European cucumber and Fresh dill sprigs
  • Serve on toasts, crackers, or inside chaux pastry puffs

Instructions

  1. Combine all the ingredients, EXCEPT the smoked trout in a medium bowl.  Stir together until well combined.
  2. Spread cream cheese mixture on crackers, inside choux puffs, etc. Top with chunks of smoked trout.  Garnish with thinly sliced cucumber and fresh dill.

Notes

Cream cheese mixture can be made up to 24 hours before serving. Assemble with smoked trout just before serving.
