TRY THESE SAVORY POTTED PRAWNS – Poached and “potted” in a savory butter sauce

Savory Potted Prawns is a traditional British dish made with shrimp flavored with anchovy and nutmeg or mace.

ingredients for savory potted prawns on a cutting boardThe dish is usually set in a small pot or ramekin, with the butter acting as a preservative. Some type of heat is usually added, either cayenne pepper, or a hot sauce as I use in my version of this classic appetizer. 

Potted shrimp was a favorite dish of Ian Fleming who passed on his predilection for the delicacy to his fictional creation James Bond.  I remember fondly reading about this strange dish in his books when I was young.  (it seemed strange to a young Polish gal, anyway!)

THE PRAWNS ARE POACHED IN A FLAVORFUL “BUTTER BATH” 

This is such a simple recipe, but yields a very “fancy” presentation of shrimp preserved in a lovely anchovy, garlic and mace butter sauce.

You actually want to cook the butter sauce a few minutes to help start the flavors to meld.  Then the sauce sits off the heat while you peel and devein the shrimp.   This extra step allows you to serve your Savory Potted Prawns only 24 hours after preparing, as opposed to the usual 48 hours.   

STORING YOUR SAVORY POTTED SHRIMP

Savory Potted Shrimp will last in your refrigerator for up to 7 days. 

I like to store mine in a glass jar, especially if I’m not serving individual ramekin servings.  That way we can pluck a few Savory Potted Prawns from the jar whenever we feel like a quick snack.

Savory Potted Prawns

Yield: 12 servings
Prep Time: 20 minutes
Cook Time: 10 minutes
Additional Time: 1 day
Total Time: 1 day 30 minutes

A British favorite, shrimp poached in a savory "butter bath" redolent with anchovy, thyme, and the key ingredient, mace, is a fabulous appetizer or brunch item.

Ingredients

  • 12 Tbsp. butter (1 1/2 sticks), cut into chunks
  • 5 anchovy fillets, minced
  • 2 tsp. worchestershire sauce
  • 3 tsp. garlic, minced
  • 1/8 tsp. ground mace
  • Zest of 1/2 lemon
  • 1 1/2 Tbsp. fresh squeezed lemon juice
  • 2 tsp. fresh thyme, leaves only
  • 1/2 tsp. kosher salt
  • 1 1/4 lbs. large raw prawns or shrimp
  • Serve with lemon wedges and Tabasco or hot sauce
  • Crackers, toasts or bagel chips

Instructions

  1. In a large skillet or saucepan, combine all the ingredients EXCEPT the shrimp. Place over medium-low heat and stir to combine as butter melts.
  2. Cook for 2 minutes more, stirring occasionally. Turn off heat and let sit to allow flavors to start to meld. (let rest for at least 5 minutes)
  3. While savory butter sauce is resting, peel and devein the shrimp.
  4. Turn the heat back on under the butter sauce to medium. As soon as the butter comes to a simmer, add the shrimp and cook for 1 minute, stirring a few times. Turn off the heat and let shrimp finish cooking in the butter sauce .
  5. Cool potted prawns for 10 minutes, transfer to a tightly covered container or jar and refrigerate for 24 hours before serving.
  6. Serve with hot sauce and lemon wedges on crackers, toasts or bagel chips.

Notes

SAVORY POTTED PRAWNS will last up to 7 days in the refrigerator.
