SAGE GREMOLATA – A Fall twist on the traditional favorite!

Gremolata is a green sauce made of chopped parsley, lemon zest, and garlic. It’s the standard accompaniment to the Milanese braised veal shank dish ossobuco alla milanese. Gremolata also makes a colorful garnish on platters and plates.

A gremolata recipe usually includes grated lemon peel, although the zest from other citrus fruits may be used.sage gremolata ingredients

There’s lots of fabulous variations switching out different herbs like cilantro, mint or sage, as in today’s recipe.

You could also choose to exclude garlic, add a little horseradish or even toss in some minced shallots.  Vary the nuts you use and change up the cheese to use up whatever you’ve got hanging around the refrigerator.

As you can see, Sage Gremolata is one of those “loose” recipes that can be adapted to what’s on hand, or how it will be used.

 

HOW TO MAKE SAGE GREMOLATA

Ingredients:

  • Packed 1/2 cup fresh sage leaves
  • 1 cup fresh parsley, stems removed
  • 1 clove garlic
  • Zest of 2 lemons
  • 2 tsp. fresh lemon juice
  • 1/2 tsp. kosher salt
  • 1/3 cup extra-virgin olive oil

 

Directions:

Combine all ingredients except oil in the bowl of a food processor.  Pulse a few time to chop herbs and combine.  With the processor running a slow speed, slowly drizzle olive oil into processor and process until combined.
