ROASTED STONE FRUITS IN BROWN SUGAR-DARK RUM SAUCE

This is a fabulously delectable fruit sauce created as a component in my Roasted Stone Fruits and Ice Cream in Puff Pastry.  I’ll show you the whole dessert put together starring this Roasted Stone Fruits in Brown Sugar-Dark Rum Sauce a little later.  

It includes a combination of ripe plums, nectarines and peaches.  I wanted to include some end-of-summer cherries too, but that means pitting them…

I know Elton Brown preaches the horrors of owning “single purpose” kitchen tools, but I can’t live without this one!  If you want whole, unmangled pitted cherries, you really do need the right tool.

And you’ll thank me when the holidays come around and you need to pit some olives to stuff with blue cheese or almonds.

INGREDIENTS – Roasted Stone Fruits in Brown Sugar-Dark Rum Sauce

  • 1 cup fresh cherries, pitted
  • Large ripe nectarine, pitted and sliced
  • 2 ripe plums, pitted and sliced
  • Large ripe peach, pitted and sliced
  • Large orange, end trimmed, thickly sliced
  • 3 Tbsp. dark or light rum
  • 1 cup light brown sugar
  • 3 Tbsp. orange juice
  • 1 tsp. vanilla extract
  • 1/8 tsp. kosher salt

 

 

  1. Preheat oven to 400°F. Place fruits, rum, brown sugar and orange juice in a medium glass casserole. Stir to combine.
  2. Place casserole in oven and bake for 25-35 minutes, or until the liquid is bubbling and begins to thicken.
  3. Let cool for 5 minutes on a wire rack. Remove the orange slices and stir in vanilla extract and salt.
  4. Cool roasted stone fruit mixture completely; place in a tightly covered container and chill until ready to assemble desserts. (at least 3 hours)
