Plump shrimp, roasted to perfection, then chilled and served with a flavorful and tangy dressing, OMG! This Roasted Shrimp Cocktail was created as part of my Pamper Me Pretty Party Luncheon Buffet.
It’s a fabulously fancy shrimp cocktail, presented in a martini glass, but the ingredients just scream “healthy”!
If you want to give your Roasted Shrimp Cocktails a little more glamour, this is how! Grab your sharpest knife or mandolin to make loooong lengthwise slices.
Just make sure you’re using an English cucumber with less seeds, or your slices will have big HOLES in them! Been there, done that!

A delicious melange of roasted shrimp, English cucumber "noodles:, red onion, avocado and Parmesan shavings. Then you douse it all in a zesty horseradish-spiked vinaigrette bursting with the fresh flavors of cherry tomatoes! Absolutely delicious!
If you don't own a mandolin, use a long sharp knife to slice the cucumber. Make sure to cut them thinly enough to allow them to be "curled" without breaking.
