ROASTED SHRIMP COCKTAIL WITH ZESTY CHERRY TOMATO VINAIGRETTE

Plump shrimp, roasted to perfection, then chilled and served with a flavorful and tangy dressing, OMG!   This Roasted Shrimp Cocktail was created as part of my Pamper Me Pretty Party Luncheon Buffet.

  It’s a fabulously fancy shrimp cocktail, presented in a martini glass, but the ingredients just scream “healthy”!

GIVE YOUR CUKES A CUT AND CURL!

If you want to give your Roasted Shrimp Cocktails a little more glamour, this is how!  Grab your sharpest knife or mandolin to make loooong lengthwise slices.

Just make sure you’re using an English cucumber with less seeds, or your slices will have big HOLES in them! Been there, done that!

Want to serve a fabulously healthy and delicious Roasted Shrimp Cocktail at your party?  When I served this pretty appetizer to the gals at my Pamper Me Pretty Party, this is how I did the prep:

  • Up to 2 days before your party, prepare Zesty Cherry Tomato Vinaigrette and keep chilled in a tightly sealed container
  • Peel and roast the shrimp the day before party; keep chilled in a tightly sealed container to keep them moist
  • Slice red onions, bag them up, label for easy identification on party day, and keep in the refrigerator until needed
  • DAY OF PARTY:  Slice cucumbers, avocado and lemons; assemble roasted shrimp cocktails; shave parmesan cheese on top of cocktails

 

NAN’S TIP:  LIGHTLY SPRINKLE AVOCADO SLICES WITH FRESHLY SQUEEZED LEMON JUICE TO KEEP FROM BROWING BEFORE SERVING

Roasted Shrimp Cocktail with Zesty Cherry Tomato Vinaigrette

Yield: 6 shrimp cocktails
Prep Time: 25 minutes
Cook Time: 10 minutes
Additional Time: 1 hour
Total Time: 1 hour 35 minutes

A delicious melange of roasted shrimp, English cucumber "noodles:, red onion, avocado and Parmesan shavings. Then you douse it all in a zesty horseradish-spiked vinaigrette bursting with the fresh flavors of cherry tomatoes! Absolutely delicious!

Ingredients

  • 24 large shrimp, peeled, tails-on
  • 1 Tbs. extra virgin olive oil
  • 1 tsp. Old Bay Seafood seasoning
  • Salt and pepper
  • 1 large English cucumber
  • 1/2 small red onion, sliced in wedges, then thin strips
  • 2 avocados, peeled, sliced into 6 wedges each
  • 1 lemon, sliced into 6 wedges
  • 1/2 cup Parmesan cheese, shaved
  • ZESTY CHERRY TOMATO VINAIGRETTTE
  • 1 pint cherry tomatoes, halved
  • 3 T extra-virgin olive oil
  • 1 shallot, finely diced
  • 2 1/2 Tbs. red wine vinegar
  • 3 tsp. prepared horseradish
  • 1 tsp. salt
  • 1/2 tsp. fresh ground pepper

Instructions

  1. Preheat oven to 375 degrees. Place shrimp, olive oil, Old Bay and S&P in a medium bowl. Toss well to coat evenly.
  2. Place seasoned shrimp on a rimmed baking sheet and roast in the oven for 7-9 minutes, or until just opague. Remove from oven, place shrimp on a flat plate, cool, then chill in refrigerator while finishing the recipe.
  3. Cut ends of English cucumber. Using a mandolin, thinly slice the cucumber lengthwise to make "noodles". Continue until entire cucumber is sliced. You need at least 1 sliced per cocktail.
  4. To make the vinaigrette, heat olive oil in a small skillet over medium heat. Add shallot, stirring and cooking for 5 minutes. Add the halved tomatoes to the skillet and continue to cook for 5 more minutes.
  5. When tomatoes start to burst, mash them to further break down. Remove from heat.
  6. Add red wine vinegar, horseradish and S&P, stirring well to combine. Cool.
  7. Chill at least 1 hour, or up to 48 hours before serving.
  8. TO ASSEMBLE SHRIMP COCKTAILS: Each cocktail should have 4 shrimp, 1 cucumber noodle, 2 avocado slices, 1 lemon wedge, and 1/6 of the onion. Start the cocktail by "curling" the noodle in the individual serving dish (martini glasses work nicely) and then start "building" the cocktail into an interesting arrangement. Cover each and chill at least 1 hour before serving.

Notes

If you don't own a mandolin, use a long sharp knife to slice the cucumber. Make sure to cut them thinly enough to allow them to be "curled" without breaking.
