I rarely am without some lovely roasted garlic tucked inside my refrigerator to use for soups, sauces and even savory cheesecakes!

Whole heads of garlic are oven roasted until soft and sweetened into a lovely mellow roasted garlic paste! Add it to almost anything!

Here’s a list of suggestions  on how to use your fabulous stash of roasted garlic!

  • Stir into soups and stews in the final few minutes of cooking
  • Blend into a bowl of cream and blue cheeses, add a drizzle of olive oil and use as a spread for grilled hamburgers or to top steaks
  • Add to the food processor when making aoili or mayonnaise
  • Use in your favorite homemade vinaigrette recipes
  • Combine with butter for super fast garlic bread
  • Add it to my Savory Party Cheesecake Appetizer recipe


As you can see, there’s no limit to how many ways you can use your roasted garlic.  Once you know you have some roasted garlictucked inside your refrigerator, you’ll find all sorts of ways to add that mellow garlicy flavor to your recipes. 



There’s no actual recipe for making roasted garlic, in fact, it’s really just a method. 

When garlic is cooked slowly in a dry heat environment, like your oven, it roasts down to a soft, mellow “jammy” consistency.

I’ll roast it in whole bulbs to make enough to last a week or so.  But with so many fabulous ways to use roasted garlic, it rarely lasts that long! 

Here’s the method for making roasted garlic:


  • Slice the tops off of as many bulbs of garlic as you want to cook
  • Drizzle the garlic generously with extra-virgin olive oil
  • Roast in a 350°F oven for an hour, or until the garlic is tender when pierced with the tip of a sharp knife
