Open-Face Breakfast Croustades with Green Goddess Sandwich Spread

Try a healthy and delicious breakfast in bed recipe that comes together in the time it takes to brew your coffee!


  • Green Goddess Sandwich Spread ( see recipe in Condiments)
  • 2 thick slices crusty whole-grain bread, toasted
  • 1 large beefsteak tomato, cored and sliced
  • 1/3 European seedless cucumber, sliced
  • 2 eggs, hard cooked, sliced thinly
  • Assorted micro-greens
  • Fresh snipped herbs
  • Kosher salt and fresh ground black pepper to taste


  1. Spread slices of toast with a generous amount of Green Goddess Sandwich Spread.
  2. Layer tomatoes, cucumbers and tomatoes, accordion-style, down the center of the toasts.
  3. Sprinkle with a generous amount of micro-greens and herbs. Season with kosher salt and fresh ground pepper to taste.
  4. Serve immediately.

Green Goddess Sandwich Spread

Yield: Scant 1 cup
Prep Time: 10 minutes
Total Time: 10 minutes

Fresh, green and packed with herbs, garlic and anchovies that add plenty of flavor to any sandwich or appetizer it's added to.


  • 1 tsp. anchovy paste or 2 anchovy fillets
  • 1 1/2 tsp. garlic, minced
  • 2 tsp. lemon juice
  • 1/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 Tbsp. fresh chives, finely chopped
  • 1 Tbsp. fresh flat leaf parsley, finely chopped
  • 2 tsp. fresh tarragon, finely chopped
  • Kosher and fresh ground black pepper to taste


  1. Place all ingredients in the bowl of a small food processor and blend until mixture is smooth, about 30-45 seconds.
  2. Refrigerate in a tightly covered container for up to 5 days.
