Haricots Verts with Pancetta Shallot Butter

Yield: 4-6 Servings
Prep Time: 10 minutes
Cook Time: 18 minutes
Total Time: 28 minutes

Give green beans a "French Flair" with crispy pancetta and shallots, sauteed in butter until sweet and savory. This fabulous side dish will elevate any weeknight meal to "gourmet" status!


  • 1 lb. fresh green beans, trimmed
  • 1 tsp. kosher salt
  • 2 oz. pancetta diced
  • 1 large shallot, peeled and diced
  • 3 Tbsp. unsalted butter
  • 1/2 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper


  1. Cook beans in salted water over medium heat until crisp tender, about 9-12 mins. Drain and hold in covered pot.
  2. In a large skillet over medium heat, fry the pancetta until crispy, remove with slotted spoon and drain on paper towels.
  3. Add 1 Tbsp. butter and shallots to the pan and saute until they just start to brown. Add remaining butter, pancetta and beans into the skillet and reduce heat to low. Toss together to combine and coat beans with butter. Season with salt and pepper, cover and heat until beans are hot, about 3 minutes.
