GREEN APPLE AND ARUGULA SALAD WITH BLUE CHEESE AND SUGARED WALNUTS

A combination of crisp, tart apple, blue cheese and sugared walnuts make a simple arugula salad extra-special for any weeknight!  Fast and easy, this Green Apple and Arugula Salad with Blue Cheese and Sugared Walnuts is full of fabulous flavor.

I love the sophisticated combination of bitter greens, tangy apples, rich blue cheese and sweetened nuts all in one salad!  I personally favor a less pungent variety of blue cheese, like gorgonzola, but just choose your favorite for this recipe.

Green Apple and Arugula Salad with Blue Cheese & Sugared Walnuts

Yield: 4 Servings
Prep Time: 15 minutes
Cook Time: 5 minutes
Total Time: 20 minutes

A lovely combination of crisp, tart apple slices, blue cheese and sugared walnuts make a simple arugula salad extra-special for any weeknight meal! Fast and easy, but full of fabulous flavor.

Ingredients

  • 1/2 cup whole walnut pieces
  • 1/3 cup light brown sugar
  • 1 1/2 Tbsp. unsalted butter
  • 1 large Granny Smith apple, sliced
  • 3 cups arugula, torn
  • 1 cup spinach, torn
  • 1/3 cup red onion, long slices
  • 1 cup blue or gorgonzola cheese, crumbled

Instructions

  1. Cover a baking sheet with a sheet of parchment or wax paper.
  2. In a small, non-stick skillet, add the brown sugar and butter over medium heat, stirring until sugar is completely melted. Add walnuts, stirring to coat. Cook and stir the walnuts for 1 more minute. Pour nuts onto parchment paper, separate and let dry.
  3. Core the apple and slice thinly.
  4. Arrange salad greens, apple slices and onion on a platter. Sprinkle with cheese and top with sugared walnuts.
  5. Serve with dressing of your choice.
