GOURMET MATZO PANCAKES OR CHREMSLACH – TWO WAYS 

Making Gourmet Matzo Pancakes or Chremslach is so fast and easy, so they should become part of your weekend breakfast routine all year long. 

But especially during Passover, when leavened bread is not consumed, these “gourmet” matzo pancakes are a special treat for breakfast for a quick “Pesach” snack.

The variations are endless, whether you add to the pancake batter itself or go nuts with toppings.

Either way, you’ll want to make some this Passover, especially if you’re hosting guests for Passover weekend.

Here’s the impossibly easy “base” recipe for Chremslach:

4 sheets matzo / 1/2 cup matzo meal / 4 large eggs, beaten / 1/2 tsp. salt / 2 tsp. honey / unsalted butter for frying

  • Crush matzo into a medium bowl (make the pieces fairly small for more uniform pancakes) and add matzo meal. Stir to combine.
  • Add enough cold water to saturate all the matzo.  Let stand for 2 minutes.  Drain, squeezing out any excess water and return to bowl.
  • Add beaten eggs, honey and salt to the matzo and mix well to thoroughly combine into a rough batter.
  • In a large nonstick skillet, melt 1 Tbs. butter over medium heat.  Scoop out 1/3 cup of batter into skillet, pushing down to form round pancake shape.
  • Cook until golden brown on first side, flip and cook for 2-3 minutes longer, or until second side is browned.  Continue with remaining batter.  Add additional butter as needed between batches.
  • Keep finished pancakes warm in a 300 degree oven, lightly covered with foil while finishing cooking the matzo pancakes.

Banana-Caramel Chremslach/Matzo Brei

1/2 cup brown sugar / 4 Tbs. unsalted butter / 2 Tbs. heavy cream / 2 ripe bananas / toasted walnuts (optional)

  • Melt butter in a small skillet over medium heat; add brown sugar, stirring until completely melted
  • When sugar mixture starts to bubble, whisk in heavy cream and continue to cook, whisking until thickened into a sauce
  • Slice bananas; add to caramel sauce and reduce heat to low
  • Cook bananas in sauce for 2 minutes
  • TO SERVE:  Top each matzo pancake with caramel-banana sauce; garnish with toasted walnuts if desired.

Vanilla Sugar & Berry Compote Chremslach

Vanilla sugar / 2 cups berries (fresh or frozen) / 1/2 cup sugar/ 1/4 cup water / 1 Tbs. fresh lemon juice / 1/2 tsp. salt / 1/2 tsp. almond extract / kosher thickener like (E-Z Gel) / toasted sliced almonds (optional)
