Sweet, sassy and totally fabulous, this Fresh Figgy Sour Cocktail is a perfect drink for dreamy Spring days or crisp Fall evenings.
Starting with a rosemary and vanilla-infused fig puree as the base and a splash of sour mix, this cocktail is finished with a shot of cognac for a perfect combo of flavors.

I’ve even included a video from a Fig farm in California to show you how fresh figs are harvested by hand.
The first ingredient we’ll need is the fig puree base that’s infused with sprigs of fresh rosemary and half a vanilla bean.
It’s a super easy recipe that comes together in a matter of minutes. Cooking down fresh figs in a simple syrup begins to break them down into a saucy consistency.
About half-way through the cooking time, I like to use my grandmother’s potato masher to help the figs break down much quicker.
Don’t worry about any leftover lumps, as after a brief cooling, the mixture gets pulsed in a food-processor until it’s smooth.
This fresh fig puree can be made when you snag some fresh figs in the store, but it will last about a week in the refrigerator. That means if you find them on Tuesday, you’ll be all set for cocktails at your place that weekend!
Adding an herbal element to a cocktail’s base is an old mixologist’s trick I learned when taking a class on a cruise years ago.
Fresh rosemary lends an earthiness to the fig mixture that offsets the sweetness and naturally enhances the undertones of the vanilla bean.
The resulting Fresh Figgy Sour Cocktail has a complexity and depth of flavor that makes it a perfect seasonal libation.
I’ve included a printable recipe card at the bottom of this post, but here’s the proportions for a single cocktail.
Personally, I generally will throw the ingredients for two into a cocktail shaker with some ice and strain it into glasses filled with fresh ice.
FRESH FIGGY SOUR COCKTAIL:
If you’re serving a crowd, you can easily make up a pitcher of Fresh Figgy Sour Cocktails for up to six people without changing the proportions. I will however add one additional shot of the brandy to the pitcher to make sure they have a nice kick. Now you can see why this is one of our newest fave fresh fig recipes.
