I’ve always been a huge lemon fan, even having gone so far as to incorporate it in my Spring/Summer kitchen and dining tabletop decor. So when I decided I wanted to do a fabulous marinated olives recipe for my New Year’s Eve party, I immediately thought: lemons!

A bowl of Easy Lemony Marinated Olives with toothpicks on the bar isn’t such a bad idea either!  They have a little kick to them, so they’re perfect for a cocktail party treat.

Two more reasons to love this recipe.

First, that they can sit in your refrigerator for up to 3 weeks during the holidays.  The recipe makes a nice 2 cup batch that should last a while. 

Second, Easy Lemony Marinated Olives can be made several days before you want to serve them, so they make a great do-ahead item on your party planning list.

Easy Lemony Marinated Olives

Yield: 2 cups
Prep Time: 10 minutes
Additional Time: 12 hours
Total Time: 12 hours 10 minutes

These citrusy cocktail nibbles have enough "kick" to hold up to the most potent of party drinks. Marinated in a lemony olive oil, permeated with a hint of garlic, this is a perfect cocktail garnish or party snack!

Ingredients

  • 1/2 cup extra-virgin olive oil
  • 1 tsp. red wine vinegar
  • 1/2 tsp. crushed red pepper
  • 2 cloves garlic, peeled and finely minced
  • 1 lemon, skin removed and cut into thin strips
  • 2 Tbs. fresh lemon juice
  • 1/2 tsp. fresh ground pepper
  • 2 cups large green olives of your choice (choose high quality)

Instructions

  1. Heat the olive oil in a medium skillet over medium heat. Add the red pepper flakes, vinegar, garlic and lemon strips. Stirring occasionally, cook for 2 minutes to let the flavors permeate the oil.
  2. Add the lemon juice, pepper and olives to skillet, tossing gently to coat olives and heat them through.
  3. Turn off heat and let sit until completely cooled.
  4. Transfer to a storage container, serving bowl or decorative jar.
  5. Olives must be refrigerated.
  6. Let the olives marinate for at least 12 hours before serving.

Notes

Don't wait until the last minute to make this recipe, it really benefits from a 12 hour minimum marination time. They keep up to 3 weeks in your refrigerator.
