Easter is one of my favorite holidays! Growing up it always seemed to be the harbinger of the Spring that was on it’s way, sometimes a bit slower than others.
I can remember sobbing because I would need to wear a coat to Easter morning services. But how would everyone see my brand new Easter dress? Oh, the trials of childhood…
But what I remember most about my childhood Easter holidays is the FOOD! I grew up in a Polish Catholic family, and we celebrated a Traditional Polish Easter that was both festive and delicious.

Today’s menu for this year’s Easter Celebration is one that I created especially for a busy hostess that’s got plenty of things on her to-do list. You might be throwing an Easter Egg Hunt with friends starving and ready to eat right afterwards. Or your gang might be arriving at your home straight from Easter services.
Whatever your Easter weekend looks like, you’ll need a menu that’s simple, and places few demands for you on Easter morning. And my friends, this is the menu! Let’s see what we’re serving, shall we?
As you can see, it’s really a simple menu, but packs plenty of flavor and has lots of colorful foods for a gorgeous buffet presentation!
Let’s go through each dish and talk about the recipes for this delectable Easter Brunch Buffet.

EASTER CELEBRATION PLANNER & PRINTABLES

What would an Easter Celebration be without some adorable party decorations? I’ve created some colorful Spring “swirlies” to “hang around” your party too!
You’ll want to print the decorations on nice card stock, glossy or matte, it’s your choice. Choose some pretty colored construction paper for the “swirly”, and you’ve got some really simple, quick and cute Easter party decorations.

A beautifully baked ham served with three different mustards is the perfect Spring entree for an Easter Brunch Buffet!
Everyone has a favorite baked ham recipe, and it’s no wonder. What guests would pass up a lovely ham sandwich served up on a delicious onion roll, baguette or slices of sesame semolina?
I simply baked off a lovely spiral-cut honey-glazed ham from the grocer’s per the package instructions. The magic is in the mustards!
Since this is supposed to be a fast and easy make-ahead Easter Brunch Buffet, I only made one of the mustards. The other two are specialty mustards I purchased from the grocer’s. I love the Boar’s Head brand and adore both their grainy and honey mustards, so they were no-brainer choices.
This mustard is one of the special recipes I keep tucked away in my hostess arsenal. If you are a mustard-lover, I can’t wait until you try my recipe for Zippy Horseradish Beer Mustard!
It’s simply one of the best mustards I have ever tasted, and that includes an extensive sampling in Germany!
ZIPPY HORSERADISH BEER MUSTARD
Zippy Horseradish Beer Mustard is a robust spread that’s perfect on baked ham, roast beef or even sausages and hot dogs! This is not a condiment for the cowardly!
Make sure you pick a sweet, dark beer that will add the depth of flavor that this recipe demands. If you’ve got a favorite, go ahead and use it, it will be fabulous!
I like to make this recipe the day ahead of serving. Sitting overnight in the refrigerator allows the flavors to develop and let’s you adjust the thickness before serving.
If it’s a bit too stiff, add a splash of beer to give it the perfect spreading consistency. I think you’re going to have a new favorite mustard after tasting this fabulous recipe for Zippy Horseradish Beer Mustard!

I truly believe that every meal benefits from having a selection of fresh, seasonal vegetables on the menu. And an Easter Brunch Buffet is no exception!
Once again, in trying to keep your Easter morning prep to a minimum, I chose a marinated cheese and vegie dish to allow you to prep and marinate the majority of the vegetables the day before.
The only vegetable I don’t include in the overnight marinade process is the cucumbers. I add them to the marinade as I’m plattering the vegetables. By the time I’m ready to place them in the platter’s colorful composition, they’ve had enough time in the Zesty Italian Vinaigrette. Easy-Peasy!
For this Marinated Cheese and Vegetable Platter I used two types of cheeses. My first choice was several soft-pillowy balls of Burrata, with their creamy centers ready to absorb the lovely Italian vinaigrette.
For the second, I bought a container of Bocconcini Mozzarella balls, a favorite with my crowd. Both cheeses readily take on the flavors of the Zesty Italian Vinaigrette, making them a perfect addition to a platter of marinated vegetables.
You want to stick to cheeses that are porous and can absorb other flavors. Hard cheeses like cheddar or gruyere are definitely not appropriate for marinating. Save them for some crackers and olives!
Here’s a few other cheeses that are great for marinating:
Any of these cheeses will be lovely on your platter. Just tuck them among the vegetables, and your presentation will be absolutely gorgeous!
ZESTY ITALIAN VINAIGRETTE
This Zesty Italian Vinaigrette brings tons of flavor to the party!
A robust combination of spices, garlic and shallots, it makes a fabulous marinade for a colorful Marinated Cheese and Vegetable Platter!
The ingredient list may seem long, but it’s mostly herbs and seasonings, so it really does come together in just a few minutes. It’s truly worth making vinaigrettes from scratch! The flavor experience is no comparison to bottled dressings.

A Marinated Cheese and Vegetable Platter is a fresh and colorful component of this tasty and appetizing Easter Brunch Buffet.

These lovely Filled Almond Scones contain centers stuffed with addictive and decadent chunks of almond paste.
Filled Almond Scones are soft, slightly sweet, and oh-so fabulous when paired with my Berry and White Chocolate Jam! YUMMY!
I don’t know about you, but I’m a sucker for anything that’s made with almond paste. Almond croissants are one of my all-time breakfast foods when on vacay!
That’s why when deciding on what kind of baked good I wanted to serve on my Easter Brunch Buffet, it had to feature almond paste.
This recipe calls for a full 6 ounces of almond paste, cut in chunks and sprinkled over a rectangle of dough. Then it’s rolled up, jelly-roll fashion, and rolled out to intersperse the paste throughout the dough.

How can such a simple and fast recipe like this Berry and White Chocolate Jam be so spectacular on your Filled Almond Scone?
My recipe for Berry and White Chocolate Jam brings together the bright and tangy flavors of sweet assorted berries.
And with just a few minutes of simmering, transforms them into a luscious, thick jam. Then we “gild the lily” for an even more heavenly concoction with the addition of hunks of smooth white chocolate. OMG!!!
