There’s nothing like taking a bite from a huge, puffy Dutch Baby!

Whether it’s simply adorned with a squeeze of lemon and powdered sugar, or topped with fresh berries and Sparkling Lemon Sugar.  Any way you can get a fork full of a fresh-from-the-oven Dutch Baby, I say do it as often as possible!

There’s no real secret to making a fabulously puffy German pancake.  But I will say that using a cast iron pan is something I think is a must-do for real success.  You can use any heavy-bottomed,  oven-safe skillet, but I’m not guaranteeing how well it will turn out.

This is a recipe that’s a great reason to finally buy a cast iron pan.  It’s especially true if you’ve been wanting one, and just haven’t gotten around to  it.

SPARKLING LEMON SUGAR – Kick it up a notch!

It’s made with Homemade Lemon Powder and Sparkling Sugar Granules.  

You’ll find sparkling sugar granules in the baking section of craft stores or online.  I always order mine from Amazon Prime when I’m placing an order for other items too.

I paid $8.99 for a 12 ounce bag on Amazon with free shipping.  I know the price is expensive compared to plain white sugar, but a little goes a long way.  Plus, it’s just so darn delicious and pretty on top of my muffins, cookies and cakes and my Dutch Baby with Berries and Sparkling Lemon Sugar!

Dutch Baby with Berries and Sparkling Lemon Sugar

Yield: 4 servings
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Light, puffy and a fabulous beginning to your day! Filled with fresh berries and sprinkled with Sparkling Lemon Sugar, it's an absolute delight for breakfast in bed!


  • 3 large eggs, room temperature
  • 2/3 cup whole milk, room temperature
  • 1/2 cup AP flour
  • 1 Tbsp. sugar
  • 1 tsp. vanilla extract
  • 1/8 tsp. kosher salt
  • 3 Tbsp. unsalted butter
  • 2 cups fresh berries of your choice
  • Sparkling Lemon Sugar (see Specialty Items for recipe)


  1. Preheat oven to 425°F.
  2. Combine eggs, milk, flour, sugar, vanilla and salt in a blender and process until smooth.
  3. Place 3 Tbsp. of the butter in a 10" cast-iron or heavy oven-safe skillet. Put the skillet in the preheated oven and heat until butter is bubbling and hot.
  4. Carefully remove the hot skillet from the oven and pour the batter into the center. Put the skillet back into the hot oven with great care.
  5. Bake until puffed and golden, about 15-20 minutes. Watch the pancake carefully to remove from oven before excessive browning occurs.
  6. Remove the skillet from the oven, and immediately add some berries into the cavity and then sprinkle generously with Sparkling Lemon Sugar or powdered sugar.
