But, it’s really a super-simple frozen bread dough focaccia recipe disguised as a gourmet Happy Hour nibble.  Crispy Prosciutto, Gouda and Shallot Focaccia is a fabulous addition to any meal!

I happen to love prosciutto, smoked gouda and shallots, especially when they’ve been caramelized.  So that’s the combination I chose for this recipe.

But of course, you can pick and choose from a myriad of ingredients, tailoring them to your preferences and dietary restrictions.

I do try to always have something creamy on top, be it a melty cheese, or perhaps a lovely bechamel.  But that’s just one gal’s opinion! 

This recipe actually uses for a flavorful smoked or plain gouda AND a slathering of garlic-butter instead of the traditional olive oil.

Crispy Prosciutto, Gouda and Shallot Focaccia is topped off with a healthy sprinkling of Everything Bagel Seasoning too.  I use it all the time, and love it on almost any bready concoction.



Prosciutto, Gouda and Shallot Focaccia is perfect for feeding hungry guests upon their arrival.  Cut into bite-sized morsels, they’re an absolute hit at cocktail hour!

Since this recipe begins with frozen bread dough, it’s fast and easy to prepare for an amazing snack for friends and family.  It’s a big recipe, using two loaves of dough, but can be easily cut in half for just a few people.

Don’t worry about thawing the frozen dough, though.

  • Place the loaves in a high sided glass casserole, cover with plastic wrap
  • Pop into the refrigerator overnight
  • When you’re ready to bake off your focaccia, the dough will be ready for you!

Crispy Prosciutto, Gouda & Shallot Focaccia

A sophisticated combination of prosciutto, gouda and caramelized shallots takes this focaccia to the next level of YUM! It's perfect for feeding hungry guests upon their arrival. Cut into bite-sized morsels, they're an absolute hit at cocktail hour!


  • 2 loaves frozen bread dough, thawed 8 hours or overnight in refrigerator (covered)
  • 2 large shallots, diced
  • 2 Tbsp. unsalted butter
  • Kosher salt and freshly ground black pepper
  • 5 Tbsp, unsalted butter
  • 3 large garlic cloves, minced
  • 8 oz. prosciutto, diced
  • 6 oz. plain or smoked gouda cheese, cubed
  • Everything Bagel Seasoning


  1. Melt butter over medium-low heat in a medium skillet. Add shallots, salt and pepper to pan and stir, coating well with butter. Cook slowly, stirring occasionally until shallots are very lightly caramelized, about 10 minutes. (they'll burn while baking if browned too long)
  2. Over low heat, coo 5 Tbsp. butter and minced garlic, stirring occasionally for 4-5 minutes.
  3. Preheat oven to 375°F. Remove bread dough from refrigerator and punch down raised loaves on a floured wooden board to release air bubbles.
  4. CHOOSE SIZE OF RIMMED BAKING SHEET - The larger the pan, the thinner loaf of focaccia you'll have. I like mine THICK, so I used a 9" x 13" pan.
  5. With your fingers, spread the dough out to cover the entire surface of your pan. Poke dents across the top of the dough at close intervals with you index finger,
  6. Brush garlic butter on surface of dough, letting the butter and garlic well-up in the indentations.
  7. Evenly sprinkle focaccia surface with prosciutto, cheese and shallots. Sprinkle with Everything Bagel Seasoning.
  8. Bake in preheated oven for 30-40 minutes, or until lightly browned.
  9. Cut into serving size pieces and serve warm or at room temperature.
