CRANBERRY CARAMEL BAKED APPLES

Tangy Autumn apple halves topped with plumped dried cranberries, crystallized ginger and nuts are baked until crisp-tender for a delicious weeknight treat.  Cranberry Caramel Baked Apples are  fabulous for your holiday brunches too!

Before serving, the baked apples are drizzled with homemade Salted Caramel Sauce

This fabulous Fall dessert is served  for Friday night dinner of my World Tour Week’s menu of the Weekday Gourmand’s Meal Planner.

Cranberry Caramel Baked Apples are served with Crispy Pancetta Rice Cakes with Tomato Basil Relish for a fabulous vegetarian weeknight repast.

Cranberry and Caramel Baked Apples

Yield: 4 servings
Prep Time: 10 minutes
Cook Time: 35 minutes
Total Time: 45 minutes

Tangy Autumn apple halves topped with plumped dried cranberries, crystallized ginger and nuts are baked until crisp-tender for a delicious weeknight treat. Before serving, the baked apples are drizzled with homemade Salted Caramel Sauce! For a weekday dessert, who knew?

Ingredients

  • 2/3 cup dried cranberries, plumped in hot water
  • 1/2 cup nuts, chopped
  • 1 Tbsp. crystallized ginger, diced
  • 1/2 cup light brown sugar
  • Pinch nutmeg
  • 1 Tbsp. butter, softened
  • 4 large baking apples (jonagold, honeycrisp, braeburn, winesap, pink lady)
  • Salted Caramel Sauce (recipe in baked apple post)

Instructions

  1. Preheat oven to 375° F. Combine all the ingredients, except for the apples, in a small bowl, Mix well to combine all the ingredients with the butter.
  2. Halve and core apples. Place on a foil-lined rimmed baking sheet, cut-sides up.
  3. Divide the topping among the apple halves and press firmly into the surface.
  4. Bake for 35 minutes, for until the apples are crisp-tender when pierced with tip of sharp knife.
  5. Let baked apples stand for 5 minutes and then drizzle lavishly with salted caramel sauce and serve.
