When it comes to making homemade popsicles, there are some guidelines and tips that can make the difference between failure and success.  And that’s why you might want to read the master article on this subject.

Plus, you’ve got to consider the amount of air inside the ingredients and how to keep your pops from being hard slabs of ice.

For example, smoothies have lots of air whipped inside, so you need to leave more room in the mold for expansion. And alcohol freezes at much lower temperatures than other ingredients, so recipes need to be adjusted accordingly.

So you can see, there’s a little more to making fabulous popsicles than just pouring liquid into a mold.

Chocolate Hazelnut Crackle Topping

Yield: 1 cup
Prep Time: 5 minutes
Cook Time: 5 minutes
Total Time: 10 minutes

You'll want to have a batch of this fabulous crackle ice cream topping hanging around your kitchen all Summer long! Pour it over your ice cream and watch the magic take place!


  • 8 oz. chocolate hazelnut spread (I use Nutella brand)
  • 2 Tbsp. solid coconut oil
  • 1/4 tsp. vanilla extract


  1. Place the chocolate hazelnut spread and coconut oil in a small saucepan over low heat.
  2. Continue to heat, stirring occasionally, until coconut oil is completely melted. Stir well to completely combine the mixture.
  3. Remove from heat, add vanilla, stir to combine and pour into a storage container with a tightly fitting lid.
  4. Store at room temperature for up to 3 weeks.
  5. To use, stir well and pour over ice cream and watch it harden! (see note)


If you want to add sprinkles, nuts, etc., they must be placed on the wet topping as soon as it is poured. (you might want to have a helper if you're doing lots of scoops/servings)
