Beet Horseradish Relish is perfect with Passover Salmon Ring, which makes it an extra special Seder holiday dish!

But that’s not all that you can do with this fabulously flavorful roasted beet relish.  It’s also wonderful with cold roasted chicken or making an appearance on a savory charcuterie board.

The sweet roasted beets combined with the heat of horseradish come together when finished with a flurry of fresh dill!

PASSOVER SALMON RING (GOURMET GEFILTE FISH)

Here’s the reason I created this lovely ruby red relish in the first place!  My Passover Salmon Ring is delicious by itself, but when garnished with Beet Horseradish Relish, it’s absolutely sublime.

It’s a little on the “fancy” side!  Baking it in a ring mold, and lacing it with chunks of salmon, carrots and red onions ensures gorgeous slices!

I just love to have a “theme” when I give a party in my home.  When inviting friends and family for a Passover Seder, it seems fitting to do the same.  This year I chose a “desert” theme with pyramids and camels on a “matzah” background.  How cute is that?

I’ll tell you how to get your own set of Passover Printables a little later in this post!

 

BEET HORSERADISH RELISH

While this is an extremely simple recipe that comes together in a snap, you do need to take the timeingredients for beet horseradish relish to roast the beets.

But I don’t look at that as a disadvantage, after all, the time is completely “hands off”, and I can come and go as I please!  I usually plan to have them share the oven with another dish, or at least roast them off while I’m engaged in another task.

Here’s how this fast and easy recipe comes together:

  • You’ll roast the beets at a high temperature after giving them a light brush of olive oil
  • While the beets are cooking, you’ll mix together the dressing 
  • Once the beets are tender, you’ll slip off the skins while they’re just cool enough to handle
  • Dicing the beets into cute cubes is the final step, and…

 

Voila!  After an hour or so of chilling, this delicious Beet Horseradish Relish is ready to go!

Beet Horseradish Relish

A delightful combination of tangy beets and red onions with a balsamic and horseradish laced sauce. It's perfect with Passover Salmon Ring for a special Seder holiday dish!

Ingredients

  • 4 medium beets, trimmed
  • Extra virgin olive oil
  • 1/3 cup extra virgin olive oil
  • 4 Tbsp. balsamic vinegar
  • 1 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper
  • 2/3 cup prepared white cream-style horseradish
  • 1/2 tsp. honey
  • 2 Tbsp. fresh dill, chopped

Instructions

  1. Preheat oven to 400°F. Place beets on large sheet of heavy-duty aluminum foil. Coat beets lightly with oil. Wrap up foil and place oven. Cook for 75 minutes, or until cooked through. Remove from oven, open foil and let cool for 5 minutes.
  2. When beets are cool enough to handle, slide off the peels, and trim off stem end. Cut beets into small cubes and set aside.
  3. In a large bowl combine the oil, vinegar, salt, pepper, horseradish and honey. Whisk to blend well. Add beets and onion, stirring to combine.
  4. Chill at least 1 hour before serving.
