Making a batch of fresh baked Orange Date Scones is a delicious idea for a Christmas Holiday Breakfast!  And if you slather them with Whipped Orange Fleur de Sel Butter, then your morning just got a little more fabulous!

When deciding on my Christmas Holiday Breakfast menus, I generally try to incorporate recipes that can be done in stages, with most of the prep work done well in advance.  It makes my holiday hostess duties a little less hectic, and lets me enjoy the holiday just as much as my guests and family.

And when it comes to breakfast breads, I’m a scone lover, for sure!  So it was an easy decision to add a scone that’s laced with dried fruit and a sweet breakfast spread.

This is a fabulous recipe to add to your Christmas Holiday Breakfast menu!  It’s incredibly versatile, and the components can be prepared ahead of time to allow you to assemble the dish Christmas morning.

The basis of this delicious recipe is my Apple Sage Breakfast Sausage PattiesThese savory pork sausages are studded with tart granny smith apples, red bell pepper and sweet Vidalia onions.

For Christmas, I left some of the green apple peel on to give the patties some “red and green” specks.  It really gives them a festive, holiday feel.  With the addition of lots of  fresh sage to complement the pork and apples, these sausages are full-flavored and luscious.

Apple Sage Sausage Patties with Caramelized Onion Cream Sauce

Perfect when you want a fancy holiday breakfast to serve your guests! Flavorful apple and sage laced sausage patties draped in a silky, deep-flavored Caramelized Onion Cream Sauce! Serve it on top of thick-sliced toasts, inside a puff pastry shell, or topped with giant buttery-garlic croutons.

Ingredients

  • CARAMELIZED ONIONS
  • (link to recipe in related post)
  • APPLE SAGE SAUSAGE PATTIES
  • 1 lb. ground pork
  • 1/2 cup Vidalia onion, diced
  • 1/2 cup red bell pepper, diced
  • 1 granny smith apple, 1/2 peeled, 1/2 unpeeled and diced
  • 3 garlic cloves, minced
  • 1 egg, beaten
  • 1 1/2 Tbsp. fresh sage, minced
  • 2 tsp. fresh thyme leaves
  • 1/2 tsp. kosher salt
  • 1/4 tsp. fresh ground black pepper
  • CARAMELIZED ONION CREAM SAUCE
  • 1 1/2 Tbsp. unsalted butter
  • 1 1/2 Tbsp. AP flour
  • 1/2 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 1 1/2 cups half & half
  • 2/3 cup caramelized onions (separate recipe)
  • 2 tsp. fresh sage
  • Dash nutmeg
  • Chopped Parsley
  • SERVING SUGGESTIONS: ON THICK SLICED TOASTS, INSIDE PUFF PASTRY, OR TOPPED WITH GIANT BUTTERY GARLIC CROUTONS

Instructions

  1. Make one recipe of Caramelized Onions as directed in recipe at link located in this recipe's related post.
  2. PREPARE YOUR CHOICE OF TOAST/CROUTONS/OR PUFF PASTRY for serving.
  3. CARAMELIZED ONION SAUCE: Melt butter in a medium saucepan over medium-low heat. Whisk in flour, salt and pepper. Let cook for 2 minutes, whisking occasionally. Turn heat up to medium, add half & half, and cook, stirring occasionally, until it is thickened and begins to bubble. Reduce heat to low, add onions, sage and nutmeg. Cook for 2 minutes and hold until needed. (sauce can be made ahead, refrigerated/reheated when it's time to serve)
  4. SAUSAGE PATTIES: In a medium bowl, mix together all the ingredients until well combined. Form mixture into 12 patties. (can be frozen/refrigerated until ready to cook)
  5. Place a skillet over medium heat and add olive oil. Working in batches, add sausage patties, cook each side until browned, 3-4 per side. Be sure the patties are cooked through before removing from pan.
  6. Serve 2 Apple Sage Patties per person, covered with sauce. Garnish with chopped parsley if desired.
